2slicesrustic white breadcrusts removed, torn into large pieces
1& 1/2 tbsp. extra-virgin olive oil
1/8cupgrated parmesan
Coarse salt & ground pepper
1large bunch of Edgar Farms asparagus
1/4lemon
Instructions
Preheat oven to 425 degrees. In a food processor, process bread until coarse crumbs form. Transfer bread crumbs to a small bowl. Drizzle with 1 tbsp of oil. Add parmesan, season with salt & pepper, and stir with a fork to combine.
Arrange asparagus in a 9x13 in baking dish. Drizzle with 1/2 tbsp. oil and season with salt & pepper. Top with breadcrumb mixture and bake until breadcrumbs are golden brown and asparagus is tender, 20 minutes. Squeeze lemon juice over asparagus just before serving.
