
Apricot Cake
Our B.C. fruit is here and Leona found a scrumptious recipe!
Ingredients
- 3 eggs
- 1 1/8 cup sugar
- 1 3/4 cup flour
- 2 1/2 tsp baking powder
- 1/3 cup butter softened
- 1/3 cup plain Greek yogurt
- 6 apricots with pits removed
- 1 tsp vanilla
- Icing sugar for dusting
Instructions
- Preheat oven to 350°F (180°C) and grease the bottom and sides of a bundt pan.
- Using a food processor, blender, or immersion blender, pureé the apricots and set aside.
- Beat eggs and sugar until fluffy.
- Add flour, baking powder, and butter, blend until smooth.
- Stir in yogurt, then add apricots and vanilla.
- Bake for 55 minutes, then remove from oven.
- Let cool slightly, then dust with powdered sugar.
