Apricot Cake

Course Dessert

Ingredients
  

  • 3 eggs
  • 1 1/8 cup sugar
  • 1 3/4 cup flour
  • 2 1/2 tsp baking powder
  • 1/3 cup butter softened
  • 1/3 cup plain Greek yogurt
  • 6 apricots with pits removed
  • 1 tsp vanilla
  • Icing sugar for dusting

Instructions
 

  • Preheat oven to 350°F (180°C) and grease the bottom and sides of a bundt pan.
  • Using a food processor, blender, or immersion blender, pureé the apricots and set aside.
  • Beat eggs and sugar until fluffy.
  • Add flour, baking powder, and butter, blend until smooth.
  • Stir in yogurt, then add apricots and vanilla.
  • Bake for 55 minutes, then remove from oven.
  • Let cool slightly, then dust with powdered sugar.
