Asparagus with Bread Crumbs & Parmesan

Ingredients
  

  • 2 slices rustic white bread crusts removed, torn into large pieces
  • 1 & 1/2 tbsp. extra-virgin olive oil
  • 1/8 cup grated parmesan
  • Coarse salt & ground pepper
  • 1 large bunch of Edgar Farms asparagus
  • 1/4 lemon

Instructions
 

  • Preheat oven to 425 degrees. In a food processor, process bread until coarse crumbs form. Transfer bread crumbs to a small bowl. Drizzle with 1 tbsp of oil. Add parmesan, season with salt & pepper, and stir with a fork to combine.
  • Arrange asparagus in a 9×13 in baking dish. Drizzle with 1/2 tbsp. oil and season with salt & pepper. Top with breadcrumb mixture and bake until breadcrumbs are golden brown and asparagus is tender, 20 minutes. Squeeze lemon juice over asparagus just before serving.
