Asparagus with Bread Crumbs & Parmesan
Ingredients
- 2 slices rustic white bread crusts removed, torn into large pieces
- 1 & 1/2 tbsp. extra-virgin olive oil
- 1/8 cup grated parmesan
- Coarse salt & ground pepper
- 1 large bunch of Edgar Farms asparagus
- 1/4 lemon
Instructions
- Preheat oven to 425 degrees. In a food processor, process bread until coarse crumbs form. Transfer bread crumbs to a small bowl. Drizzle with 1 tbsp of oil. Add parmesan, season with salt & pepper, and stir with a fork to combine.
- Arrange asparagus in a 9×13 in baking dish. Drizzle with 1/2 tbsp. oil and season with salt & pepper. Top with breadcrumb mixture and bake until breadcrumbs are golden brown and asparagus is tender, 20 minutes. Squeeze lemon juice over asparagus just before serving.
