
Healthy Banana French Toast
Use the leftovers to make strawberry jam and cream cheese sandwiches for next day's lunchbox!
Ingredients
- 1 ripe banana
- 2 eggs
- 1/4 cup milk
- 1 tbsp butter
- 2 tbsp peanut butter optional
- 1/4 tsp vanilla extract
- 1/4 cinnamon
- slices of bread
Instructions
- Mash your banana in a baking dish. Try to get it as smooth as you can but it's okay to have some lumps
- Whisk together the milk, eggs, cinnamon, vanilla, and peanut butter if using
- Dip bread into the mixture to coat it on both sides
- Heat skillet or griddle and melt butter under medium-low to medium heat. Once it is bubbly, add the soaked bread and cook for 2-3 minutes on each side, until golden brown
- Serve with fresh Jungle Farm fruit – strawberries, raspberries, saskatoon berries
