Stuffed Head Lettuce

Course Salad

Ingredients
  

  • 1 Jungle Farm head of lettuce
  • 1 3 oz package of cream cheese
  • 2 tbsp blue cheese
  • 2 tbsp grated carrots
  • 1 tbsp minced green pepper
  • 2 tbsp diced tomatoes
  • 1/8 tsp pepper
  • 1/4 tsp salt
  • 1 tsp minced onion

Instructions
 

  • Wash lettuce, without pulling head apart; remove core.
  • With a tbsp, remove enough of the lettuce around core to leave a cavity 2 to 3 in diameter
  • Save removed lettuce for another use
  • Combine cheeses, carrot, green pepper, tomato, pepper, salt, and onion, pack firmly into lettuce cavity.
  • Wrap lettuce head in plastic wrap and chill until centre is cold
  • Slice lettuce into wedges
  • Serve with any of The Jungle Farm vinaigrettes – strawberry, saskatoon, raspberry, black currant.
