Stuffed Head Lettuce
Ingredients
- 1 Jungle Farm head of lettuce
- 1 3 oz package of cream cheese
- 2 tbsp blue cheese
- 2 tbsp grated carrots
- 1 tbsp minced green pepper
- 2 tbsp diced tomatoes
- 1/8 tsp pepper
- 1/4 tsp salt
- 1 tsp minced onion
Instructions
- Wash lettuce, without pulling head apart; remove core.
- With a tbsp, remove enough of the lettuce around core to leave a cavity 2 to 3 in diameter
- Save removed lettuce for another use
- Combine cheeses, carrot, green pepper, tomato, pepper, salt, and onion, pack firmly into lettuce cavity.
- Wrap lettuce head in plastic wrap and chill until centre is cold
- Slice lettuce into wedges
- Serve with any of The Jungle Farm vinaigrettes – strawberry, saskatoon, raspberry, black currant.
